This lemon garlic chicken recipe has been my new favorite. These chicken skewers are so easy to make and easy to serve because the cubed chicken cooks up so quickly that dinner is ready in no time. The bite-sized pieces of chicken can be served on their own directly on the skewer or as a part of a salad.

What You’ll Need

  • Chicken: I used boneless skinless chicken thighs that I cut into 1-inch chunks.
  • Marinade: For the lemon garlic chicken marinade, I use mayonnaise, lemon juice, garlic, paprika, oregano, Dijon mustard, rosemary, red wine vinegar, honey, salt, chili flakes, pepper, olive oil, and lemon zest.

How To Make Lemon Garlic Chicken Skewers

  • Prepare the chicken: Slice the chicken into 1-inch cubes or bite-sized chunks. 
  • Marinate the chicken: In a bowl, combine the rest of the ingredients to make the marinade. Mix well until well combined. Add in the cubed chicken in the marinade bowl and mix to coat well with the marinade. Cover and allow the chicken to marinate for 30 minutes to 1 hr.

  • Prepare the grill: Preheat the grill. Skew the chicken onto the skewers.
  • Grill the chicken: Spray the grill with some non-stick oil spray and grill on each side for 4-5 minutes until fully cooked or reaches an internal temperature of 165°F. Remove from heat and serve immediately with your favorite side dish.

Tips and Notes

  • To make this spicier, you can add more chili flakes or even some cayenne pepper.
  • If you are worried about the meat sticking to the skewer, spray them with a bit of non-stick spray before placing your ingredients onto the skewer.
  • Feel free to add some vegetables to this like bell peppers, onions, zucchini, and more.
  • Always use a preheated grill so the chicken doesn’t stick.

FAQs

What kind of skewers do I use?

You can use metal or wooden skewers. I like to soak my wooden skewers for 15 to 30 minutes before using them so they don’t burn on the grill. Wooden skewers are great if you don’t grill often but if you do, you should invest in a set of reusable metal skewers. I prefer ones that have a nice large hook on one end that allow you to grab and turn them with ease when on the grill, and this also makes it easier to hold them when you are sliding the meat off the skewer and onto a plate.

Can I use a different cut of chicken?

I use chicken thighs as thighs are much juicier than breasts and since we are cubing it, it decreases the risk of drying out the chicken. You can definitely use chicken breasts if you prefer.

What if I don’t have a grill?

You can make chicken skewers in the oven instead. Simply place them on a sheet pan and bake them for 10 to 15 minutes at 400°F.

Are these chicken skewers good for meal prep?

If you love meal prepping, then you’re in luck. I meal prepped some of those chicken skewers I made for my husband. You know what that means right? They are “picky husband” approved as well. They can last for up to 4 to 5 days when stored in an airtight container. I just remove them from the skewers so they can be microwaved at work.
