What You’ll Need

  • Shrimp: I like using jumbo shrimp. You can purchase shrimp that has been deveined and peeled to make prepping it easier for yourself.
  • Lime: I recommend using fresh lime juice and not bottled. Bottled can work in a pinch but won’t taste as good.
  • Salt: a pinch is all you need.
  • Chipotle seasoning: you can find this at any major grocery store.
  • Olive oil: or neutral oil of your choice. 
  • Garlic: garlic adds a ton of flavor to the shrimp.
  • Bowl Toppings: I topped my shrimp bowl with bell pepper, onion sliced, black beans, butter lettuce leaves, avocado peeled and sliced, corn, serrano pepper, white rice, and cilantro. Feel free to swap out what you’re not a fan of for your favorite veggies!

How To Make a Chipotle Shrimp Bowl

  • Marinade and cook the shrimp: To prepare the shrimp, marinate with lime juice, chipotle seasoning, garlic, and salt. Bring a skillet to medium high heat and add the olive oil. Pan sear the shrimps on each side for 5 minutes or until fully cooked and golden brown in color. Set aside in a bowl and cover with foil wrap.

  • Cook the bell peppers and onions: In the same skillet, add 2 tsps. of olive oil and sauté the bell pepper and onion until tender. Set aside to cool.
  • Assemble the bowls: To assemble the salad bowl, add in the lettuce leaves and start stacking the other ingredients next to each other to assemble the dish. You can enjoy as is or drizzle your favorite dressing onto the salad and serve.

Tips and Notes

  • Feel free to scale this recipe up to make multiple bowls for the whole family.
  • Shrimp is cooked once it goes from translucent to opaque. If you overcook shrimp, it’ll taste rubbery. 
  • Make sure the pan is hot before adding the shrimp to it for a crispy exterior. 
  • You can use raw or frozen shrimp (thawed).
  • Make sure to dry off your shrimp completely with a paper towel, this allows the seasoning to stick to the shrimp.
  • I marinated the shrimp and pan seared them. You can grill them if you want.

Can I use frozen shrimp?

Yes, you can. If you use frozen shrimp in this recipe, be sure the shrimp is completely thawed before cooking it. This will ensure that it cooks evenly. Thaw the shrimp overnight in the fridge in a sieve over a bowl to capture the water or under cold running water until it is completely thawed. Then pat dry before using. Frozen shrimp might be ideal as it might be even fresher than shrimp from the fish counter.

What else can I add to this bowl?

Some other add-ins you can add to this shrimp bowl are tomato salsa, guacamole, crumbled Cotija cheese, pickled red onion, sliced jalapenos, salsa verde, and more.

How do I meal prep this?

You can store the entire bowl in an airtight container, minus the lettuce, in the fridge. The lettuce’s texture won’t be great upon reheat. Reheat this the next day in a microwave until the rice and shrimp have warmed through. Cold rice can be dry and crunchy so be sure to heat it thoroughly. You can also add a splash of water or broth when reheating to keep the moisture in the bowl.
