What You’ll Need

  • Chicken tenderloin: cubed into 1″ bites. You can also use chicken thighs or chicken breasts.
  • Flour: you can use regular flour or gluten-free flour if you’d like for these chicken bites to be gluten-free.
  • Seasoning of choice: I used Pioneer Woman’s Anything Goes Seasoning.
  • Egg: you’ll need one egg as it’ll produce a thicker, more stable crust on the crispy chicken.
  • Heavy cream: this is for the egg wash. Or use butter milk.
  • Canola oil: this is for frying the chicken.

Tips to make tasty chicken bites

  • Want to add some extra savory notes to these chicken bites, you can grate some parmesan on top of the freshly fried chicken bites. The heat from the chicken will melt the parmesan.
  • The chicken is done when the internal temperature is 165F degrees.
  • Be sure not to have the oil too hot or not hot enough! If the oil is too hot then the chicken’s crust will burn before the internal gets cooked through and if the oil is not hot enough, the chicken will absorb too much oil and the nuggets will be greasy.
  • If you can, use a cast iron to fry the chicken as it controls heat well.
  • If you do not have heavy cream, you can use butter milk.
  • We like to dip these chicken bites in ketchup, honey mustard, ranch, and BBQ sauce.
