How to Make Buffalo Cauliflower Tacos

  1. Preheat oven and prep baking sheet. 
  2. In a bowl, mix flour, garlic, salt, and paprika. 
  3. Add almond milk, then fold in cauliflower florets and coat evenly. 
  4. Spread cauliflower out on the baking sheet, then bake as directed. 
  5. While cauliflower is baking, make the buffalo sauce. 
  6. When cauliflower is done, pull out, mix with buffalo sauce, then bake again. 
  7. Place cauliflower on tortilla or flatbread and top with your choice of toppings.

Spread Cauliflower Evenly

Make sure that you bake the cauliflower in a single layer on the baking tray. This will ensure that the cauliflower cooks evenly. 

Stir Halfway Through Baking 

Make sure to flip the cauliflower over halfway through cooking. This will also give your cauliflower florets a nice even cook. 

Adjust Cooking Time

Depending on the size of your cauliflower pieces, the cooking time will vary a bit. Either cook the florets for a bit less or more time as needed. You want the outside of the cauliflower to be crispy with a tender center.

Change Up the Seasonings 

Feel free to add in a little taco seasoning—or even Cajun!—for added flavor. I used salt, paprika, and garlic salt, but feel free to use any spices you prefer!

Adjust the Spice Level

Feel free to add more or less hot sauce to fit your preference. You can also choose a milder hot sauce if you are not a big fan of spicy flavor. I used Frank’s Buffalo sauce, but you can use any brand you prefer.

Why do you warm up tortillas for tacos? 

Warming up tortillas makes them softer and more flexible. It also gives the tortillas more flavor! You don’t have to warm up your tortillas, but if you try it once, you might never go back!

Do these tacos make good leftovers?

Feel free to store any of the cauliflower taco fixings in the fridge for a few days. I recommend storing each taco component, including your cauliflower, in its own container so the tacos don’t get soggy. Then you can simply assemble a taco from the fridge whenever you’re hungry!

How do you reheat cauliflower bites? 

If you have leftovers, you can warm up in the microwave or even in the oven. If you heat up the cauliflower in the oven, make sure to cover it with foil or your tacos may dry out and burn the sauce on the outside.

Ingredients

Buffalo Cauliflower

  • ½ cup flour
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp paprika
  • ½ cup plain almond milk
  • 1 head cauliflower chopped into florets
  • ½ cup hot sauce such as Frank’s buffalo sauce
  • 1 tbsp canola oil or your oil of choice
  • 1 tbsp maple syrup or agave syrup

Tacos

  • 6 small flatbreads or tortillas
  • 1 cup lettuce such as romaine; chopped
  • ½ red onion sliced
  • ½ cup vegan sour cream or plain nondairy yogurt

Toppings

  • cilantro optional
  • avocado optional
  • lime wedges optional

Instructions

  • Preheat the oven to 425°F, and line a baking sheet with parchment paper.

  • In a large bowl, mix together the flour, garlic powder, salt, and paprika until well combined.

  • Whisk in the almond milk until the batter is smooth.

  • Then add the cauliflower florets and toss until they are evenly coated.

  • Spread cauliflower out on the prepared baking sheet and bake for 20 minutes, gently stirring halfway through, or until fork tender.

  • While cauliflower is cooking, mix together the hot sauce, oil, and maple syrup in a small bowl. Set aside.

  • Once cauliflower is cooked, transfer it to a large mixing bowl and toss with the prepared hot sauce

  • Use a slotted spoon to transfer the cauliflower back to the baking sheet and return to the oven for 2–3 minutes, until sauce is bubbling.

  • Serve cauliflower over the flatbread or tortillas, topped with lettuce, red onion, sour cream, and your favorite taco toppings.
