How to Make Avocado Toast With Egg

To start you need to make the base of the toast, which is everything before the eggs.

  • Toast your bread in the toaster or oven.
  • Cut the avocados open and remove the seed. 
  • Scoop out the avocados into a bowl, add in a splash of lemon juice, a pinch of salt, and red pepper flakes.
  • Smash your avocado with a fork to the texture you like. Leave it chunky or smash it until smooth.
  • Spread it onto your toasted bread.

Avocado Toast Variations

To finish off the avocado toast, you need to decide how you want to cook your eggs. My 3 favorite ways are scrambled, poached and fried.

Avocado Toast With Scrambled Eggs

  • In a non stick skillet, melt 1-2 teaspoons of butter over low heat. In a bowl, crack an egg and whisk it well. Add some salt and pepper to taste. Pour in the whisked eggs into the skillet.
  • As it sets, move the egg with your spatula from side to side to form large, soft curds. Cook until full cooked, but not dry.
  • Top your avocado toast with the egg and sprinkle some pepper flakes, spices or topping of your choice.

Avocado Toast with Fried Eggs

  • Heat a small non-stick skillet over medium heat. Melt some butter or add oil. Once it’s heated, carefully pour an egg into the pan, add salt and let it cook until the whites are completely set but the yolks are still soft to make a sunny side up egg.
  • Carefully place the egg on top of your avocado toast and top with seasonings of your choice.

How to Pick and Store Avocados

  • To pick an avocado, gently squeeze them. A ripe avocado is firm but has a bit of soften to it. If the avocado is too firm, leave it on your countertop to ripen. 
  • Avoid avocados that are overly soft or if the skin has blemishes as it means it’s over ripened and is not ideal for avocado toast.
  • When bringing avocados home, store unripe avocados on the counter, out of direct sunlight. Once ripened, enjoy immediately or store it in the fridge.

  • Use thick and sturdy bread to prevent the toast from falling apart.
  • Use ripe avocados. To check if an avocado is ripe, remove the stem on top gently. If it comes out easily and the stem color is green, your avocado is ripe enough. If it’s brown, it’s too ripe. It the stem doesn’t come out easily, it’s still raw.
  • Add in flavors to your avocado, like garlic, lime or lemon juice, chili pepper, spices etc.
  • Add other toppings like jalapeño, sliced onions, smoked salmon, tomatoes etc.
  • Eat your avocado toast right after you assemble it. It will get soggy and unpleasant when left uneaten for too long.
