As mentioned in my book The Plant Paradox, plants use their polyphenols to protect their mitochondria from damage, particularly from sunlight. Notice the parallels here: plants need sunlight in order for their mitochondria to produce energy; humans need oxygen for the same purpose—yet both sunlight and oxygen are damaging to these organelles.

So, how do plants mitigate this damage? By producing “sunscreens” (aka their polyphenols). And fun fact: the polyphenol content of a plant’s leaves are usually much higher than the fruit.

Beyond their role in protecting plants, polyphenols also act as prebiotics—the compounds that encourage the growth of the good bacteria that live in your microbiome. There, they are consumed by those bacteria, then transformed into active postbiotic compounds.

You’ve likely been told, time and time again, that polyphenols have healthy-aging effects by way of fighting the free radicals that come from smoke, air pollution, and excess alcohol consumption. You may have also heard that they can encourage your blood vessels to remain flexible, keeping your blood pressure in a healthy range and reducing inflammation. And, of course, who can forget all the stories about how polyphenols control blood sugar levels and modulate insulin release? I haven’t even gotten to the claims that polyphenols protect against Alzheimer’s, cognitive decline, and neurological inflammation—nor that it prevents damage to cells. That’s quite a list, no?

In my experience, the tales are all true. Polyphenols are behind this list of “magical” benefits, but they don’t have much do with polyphenols acting as antioxidants.

According to Kierslyn Kujawa, Earth’s Ally brand ambassador and plant influencer behind PlantedinPots, this white buildup is the result of a combination of the kind of planter you have and the water you’re using to water your plants.

“As the porous material that the planters are made of wicks away excess moisture from the plant,” she explains, “it leaves behind minerals that are in your water.” (If you’re using tap water to water your plants, there are likely trace amounts of salt and other minerals in it.)

This happens because certain porous materials, like terra-cotta, “breathe” out excess moisture, leaving the residue on the outside of the planter. If there’s enough moisture for an extended period, mold can even form (which will look fuzzy, as opposed to chalky).

But Kujawa assures mbg, “The white stuff on the outside of planters is typically no reason to panic.” And if the look doesn’t suit the aesthetic you’re going for, here’s what to do.

Leafy Greens

Some examples of these could be vitamin K, which helps regulate calcium in the bones and brain – as excess can lead to Alzheimer’s. Beta carotene, which helps slow down memory decline, and folate, which can help ease and prevent mental fatigue and irritability, are also important.

Nuts

Walnuts in particular are hailed as iconic brain food – it even looks like a brain! Nuts have been found to be able to strengthen brain wave frequencies if eaten on a regular basis. These brain waves are in connection to healing, learning, and other cognitive functions. There have been some studies to suggest that walnuts can help improve memory, but fatty acids from any nuts are a great source of nutrients for the brain, so feel free to tuck into whichever takes your fancy.

Berries

Berries are also an excellent plant-based food source for the brain and can help preserve its health in a few ways. They are packed with antioxidants and flavonoids, which protect the brain from oxidative stress but also help prevent brain diseases such as Alzheimer’s. There has been a fascinating study that suggests that berries are able to change the way in which neurons communicate in the brain, which signals to prevent inflammation in the body and also improve cognition.

Whatever you eat, be sure to make sure it is balanced so you are giving your body access to all of the food groups such as carbohydrates, proteins and fats.

Shades of Green

The experience at Shades of Green begins with all diners going on a guided tour of the garden to learn about the herbs, vegetables and fruits grown there. They will use all five senses as they pick the ingredients to be used in their meal. All diners are encouraged to examine, pick, smell, and taste the herbs, fruits, and vegetables growing in the garden. Along the way they will come across a number of amuse bouche hidden amongst the greenery. After this the diners gather around a fire pit for the first course before being seated at tables beneath the shade of the pergola and fruit trees. The menu features simple yet experimental plant based dishes, blending Maldivian and Southeast Asian cuisines; which are then prepared using Nordic techniques such as smoking, salting, fermenting, and pickling.

The menu celebrates the garden and the season revolving around colours (red, green, yellow), green umami (the fifth basic taste) or around one vegetable prepared in multiple ways. Each menu has six courses with dishes falling under: cleansing, crispy, raw, grain, fire and sweet. There will also be a cold press of the day, flavoured lemonade, fragranced iced tea, and cocktails. Examples of menu items include: aloe vera nam jim, red quinoa porridge, and screw pine fruit lemonade.

In March 2018 Chef Carsten visited Soneva Fushi as a guest, where he experienced the organic garden lunch and was inspired to create this dining concept. Chef Carsten, who is based in Copenhagen, also works as a food and travel writer, a creative food consultant and a food stylist when he is not in the kitchen. He has recently collaborated at a number of Soneva’s dinner events to develop new and innovative food concepts for guests in Scandinavia. They combined the flavours of the Indian Ocean with Southeast Asian cuisine and Nordic flavours.

Chef Carsten has worked and travelled across Southeast Asia over the last 15 years. During that time he was a consultant in Chiang Mai, Thailand. While there, he created Nordic and European menu concepts using local Asian ingredients. He creates recipes for the creative and commercial food industries, and has authored several cookbooks.
