Is beef low carb?

Beef is very low carb! In fact, there are 0 carbs in red meat. It’s also surprisingly low in calories. For example, 3 oz of beef tenderloin is just 275 calories.

Depending on the cut of meat you can, it can also be low or high fat. While the fattier cuts are more caloric, they will also be more satiating and flavourful.

Beef is also high-protein and is jam-packed with nutrients and vitamins such as zinc, iron, selenium, and B12, just to name a few. It definitely deserves a spot at your dinner table!

The amount of protein and fat in any cut of beef will be dictated by which variety of beef you buy. The higher the fat content, the lower the protein.

Now, on to the good part – the sides! These dishes will add extra flavor while also being easy on the carbohydrates.

Mashed cauliflower

First, let’s address the elephant in the room. There are many classic pairings for steak that are very high in carbohydrates (I’m looking at you, mashed potatoes!).

However, I’ve found an excellent substitution for mashed potatoes…mashed cauliflower. You’ll barely note the difference, particularly when you season them properly.

Simple side dish ideas for beef (no recipe needed)

These ideas are so simple that there’s no recipe required! I love experimenting with all the different flavors, sauces, and seasonings that make each of these side dishes the perfect match for beef! Choose a few of these side dishes and enjoy.

Green beans

Whether you sautee fresh green beans in butter or grab a can of green beans and re-heat, this side pairs well with red meat.

I particularly like mine with a squeeze of lemon juice over the top for extra flavor. Green beans however are a higher carb vegetable so make sure you portion control them and add them into your daily carb limit.

Salad

Salad is a simple and versatile side dish that can be made a million different ways. Make a pile of leafy greens and add extra virgin olive oil and low-sugar balsamic vinegar dressing, or squeeze some lemon juice on.

You can even just grab a salad kit from the grocery store – just make sure to watch for sneakily added carbs!

Roasted veggies

Grab some cauliflower, broccoli or any other hardy veggie like carrots (just watch the carbs). Chop them into uniform pieces, add some oil and spices like thyme, and roast until they are crispy on the outside and tender on the inside!

Sauteed greens

Heat some olive oil and garlic over a pan, then add in your greens. You can enjoy collard greens, chard, kale, or spinach—or a combination! Feel free to experiment with seasonings and toppings. Its truly delicious!

Simple steamed low-carb vegetables

Simple steamed or boiled broccoli and cauliflower are easy mid-week side dishes. Always keep a supply of fresh or frozen vegetables at hand.

Low-carb condiments for your steak

Last, but not least, part of the fun of enjoying steak is the sauce you serve it with!

Here are some of my favourite steak toppings and seasonings:

  • blue cheese – the creamy tanginess of blue cheese is the perfect pairing for tender, juicy steak. If you aren’t a blue cheese fan, try gargonzola cheese or even shaved parmesan.
  • ketchup – but make sure to watch the carbs and added sugar. Get my Instant Pot sugar-free ketchup recipe here.
  • bbq sauce – again, you’ll have to watch out for the carb count. If you want a guilt free version, try my delicious tangy keto bbq sauce. It only has 1 gram net carbs per 2 tablespoons!
  • a creamy sauce like this cream cheese mushroom sauce. It’s fantastic!
  • minced garlic and butter – another classic topping. It’s as simple as adding a generous pat of butter and some garlic or chives on top of your steak.
  • red wine sauce – cook your steak in a red wine reduction with some seasonings.
  • salt and pepper for classic flavor.

There’s a recipe on the blog for Pumpkin Chili that you can make in the slow cooker or the Instant Pot, and it’s been a hit. In fact my nephew Matt and his wife Lindy won a chili-making contest with that pumpkin chili! But the recipe uses three cans of beans and it’s not going to work if you’re eating low-carb or avoiding beans.

And sometimes I love to make chili on the stove and make the house smell great, so once the idea popped into my mind for a no-bean chili with pumpkin, I had to see what I could come up with!

Trust me when I say this no-bean Pumpkin Chili with Beef, Peppers, and Olives is delicious! It has lots of ground beef, chopped green pepper, diced green chiles, and olives, and just one can of pumpkin puree so there’s not a strong pumpkin flavor, but the pumpkin gives it a slight sweetness that’s delicious with the spices that make it taste like chili.

I’m featuring this recipe for my Friday Favorite’s pick this week, and I think this would make a great dinner for Halloween night. The recipe makes quite a bit, so you might even have some left over to put in the freezer for another cold evening when chili sounds good!

What ingredients do you need for this recipe?

What if you’re not a cilantro fan?

If you’re not a cilantro fan you can definitely leave out the dried cilantro and use a bit more thinly-sliced green onion to replace the fresh cilantro.

Why would you add pumpkin to chili?

Pumpkin chili is probably not for people who are confirmed pumpkin haters, although this chili doesn’t have a strong pumpkin flavor. The pumpkin simply adds a slight sweetness to the chili which many people really seem to enjoy.

How long will this recipe keep in the fridge or in the freezer?

This pumpkin chili will keep at least a week in the fridge, and the flavors almost seem to improve when it’s reheated. And you can freeze the pumpkin chili for about 6 months if it’s in a container with a tight-fitting lid.

How to Make No-Bean Pumpkin Chili:

(Scroll down for complete printable recipe with nutritional information.)

  1. Brown ground beef well, season with salt and pepper, and add it to the soup pot.
  2. Saute chopped green pepper and onion until they’re starting to soften; then add minced garlic and diced green chiles and cook 2 minutes more.
  3. Add all the spices and dried herbs and cook 1-2 minutes more, then add that to the soup pot.
  4. Deglaze frying pan with one can of beef broth and add that liquid to the soup pot as well as the other can of beef broth, the petite diced tomatoes, the pumpkin, and the halved olives.
  5. Let the chili simmer 45 – 90 minutes on low heat.
  6. Then add the chopped cilantro, sliced green onion, and Green Tabasco Sauce (affiliate link) and simmer 10 minutes more. 
  7. Serve hot, with additional sliced green onions, chopped cilantro and Green Tabasco Sauce to add at the table.
  8. Some grated cheese and sour cream would be great on this too!

Weekend Food Prep:

Ingredients

  • 2 lbs. ground beef (see notes)
  • 4 tsp. olive oil, divided
  • salt and fresh-ground black pepper to taste
  • 1 medium onion, chopped in half-inch pieces
  • 1 green bell pepper, chopped in half-inch pieces
  • 1 T minced garlic
  • 7 oz. can diced green chiles (see notes)
  • 1 T Spike Seasoning (see notes)
  • 1 T ground cumin
  • 1 T chili powder
  • 1 T dried cilantro (optional, but good if you have some)
  • 1 tsp. dried Mexican oregano (see notes)
  • 2 14 oz. cans beef broth
  • 2 14.5 oz cans petite dice tomatoes
  • 1 15 oz. can pure pumpkin puree
  • 1 6 oz. can black olives, drained and cut in half lengthwise
  • 1/2 cup finely chopped cilantro, plus more to add at the table (optional)
  • 1/2 cup thinly sliced green onion, plus more to add at the table
  • 2 T Green Tabasco Sauce (Use more or less to taste.)

Instructions

  1. Heat 2 tsp. oil in a large non-stick frying pan. (I used my favorite Green Pan (affiliate link) for this.) Add the ground beef and brown well over medium-high heat, stirring often and breaking apart with the turner (or a potato masher) as it cooks.
  2. When beef is nicely browned, season it with salt and fresh ground black pepper to taste and add it to a large soup pot that’s big enough to hold all the ingredients.
  3. Add the other 2 tsp. olive oil to the frying pan, add the chopped onion and green pepper, and cook over medium heat until the vegetables start to soften, about 3-4 minutes. Then add the minced garlic and diced green chiles (with juice) and cook about 2 minutes more.
  4. Add the Spike Seasoning (affiliate link), ground cumin, chili powder, dried cilantro (if using) and dried oregano and cook a minute or two longer. Then add the onion-pepper-spice mixture to the soup pot.
  5. Deglaze the frying pan with one can of beef broth and add it the soup pot with the other can beef broth, diced tomatoes plus juice, the pumpkin, and the olive halves.
  6. Let the chili simmer over low heat for 45-90 minutes, stirring a few times. (It can cook a bit longer than 90 minutes if needed as long as the heat is low.)
  7. About 20 minutes before you want to serve, add the finely chopped cilantro, thinly sliced green onions, and Green Tabasco Sauce. Let chili simmer 10 minutes more with those ingredients added.
  8. Serve hot, with additional chopped cilantro, sliced green onion, and more Green Tabasco Sauce (affiliate link) to add at the table if desired.

Notes

I used ground beef with only 10% fat; you might need to drain the pan after you cook the beef if you use a fattier mix of ground beef. I use Anaheim chiles for the diced green chiles (affiliate link) not Jalapenos, unless you want it really spicy. I used Spike Seasoning (affiliate link) but use any all-purpose seasoning blend. I would prefer Mexican Oregano (affiliate link) for this recipe, but you can use any oregano you have.

This freezes well, and can be easily reheat in the microwave or in a pan on the stove.

It’s made with chunks of beef brown with onions and garlic and then cook on low in a mixture of broth and red wine until tender. The stew is flavored with oregano, thyme, and bay leaf, and fresh pumpkin or winter squash is added halfway through. The best meat for beef stew is beef chuck roast. It conveniently is one of the more budget-friendly cuts of meat since it’s so tough – making it perfect for stews. Since it’s higher in fat, I like to pair it with plenty of vegetables to balance the dish.

Do I have to brown the meat for beef stew?

Yes, I highly recommend it! Browning the beef gives it a much deeper flavor.

How can I make my beef stew tender?

Stews are all about low and slow cooking. The tough chuck roast is cut into small one-inch cubes and cooks on low heat for almost two hours. As it cooks, the beef will break down and get more tender. It’s definitely worth the time. Don’t use lean beef here, it will never become tender even if you cook it for hours.

This hearty beef stew cooks low and slow on the stove with pumpkin (or butternut/acorn squash) added when the beef is tender. Serve with crusty bread to soak up every last drop!

  • 1 tablespoons olive oil
  • 1 1/2 cups chopped onion, from 1 large
  • 2 cloves garlic, chopped
  • 2 pounds beef chuck, cut in 1 inch cubes

  • 2 1/2 cups beef broth
  • 1/4 cup red wine
  • 1 teaspoons dried oregano

  • 1 bay leaf

  • In a large pot or Dutch oven, saute the onion in oil on medium heat until soft, about 5 minutes. Add the garlic, and cook 1 minute, until fragrant.

  • Add meat and 1 teaspoon salt, brown 5 to 7 minutes. Add tomato paste, cook 1 minute.

  • Add remaining ingredients except pumpkin, cover and cook on low heat until the meat is tender, about 1 1/2 hours.

  • Add the pumpkin (or squash) and cook and additional 30 to 35 minutes, until pumpkin is tender.

  • Taste for salt and adjust as needed, discard bay leaves and serve.

I hummed and hawed on what to call this recipe as ground beef is not typically what you’d consider mediterranean food. But the blistered tomatoes, bell pepper, baby spinach, green onion, and garlic are most definitely Mediterranean in nature. So consider it a healthier, veggie-packed ground beef stir fry that’s light in flavor. A divergence from your typical Asian chicken stir fry flavors, yet delicious in a whole new way!

And speaking of flavors and sauces, there’s actually no sauce in this recipe. Once the tomatoes break down they become oozy and liquidy, and that melds with the garlic and oregano and douses the rest of the ingredients in garlicky, Mediterranean goodness. You’re gonna love it.

What’s In This Mediterranean Stir Fry?

From the blistered tomatoes to bell pepper and oregano, this non traditional stir fry is made from the best Mediterranean ingredients.

  • Bell Pepper: Red bell pepper is ideal for its natural sweetness and vibrant red color, but any color works!
  • Cherry Tomatoes: Grape tomatoes can be a substitution, but cherry tomatoes are ideal here since they’re much juicier and blister beautifully in a pan.
  • Baby Spinach: It’s amazing how much a small tub of spinach wilts down, so while it may look like a lot, trust me, it’s not too much.
  • Garlic and Green Onion: Essential alliums give the recipe a punch of fresh flavor.

Let’s Make The Best Stir Fry Recipe!

What I love about stir fries is that they’re SO easy to make, yet just as flavorful as a recipe that takes hours. So grab a large pan and let’s get cooking.

  • Saute the tomatoes and bell pepper. Heat the oil in a large pan, then saute the bell pepper and cherry tomatoes for 4 to 5 minutes, until the tomatoes are blistered. Then add the garlic and stir for another minute.
  • Cook the spinach and green onion. Add the spinach and white parts of the green onion. Then stir for another 2 to 3 minutes, until the spinach has wilted. Remove these veggies to a plate.

  • Use this as a filling for a butter leaf lettuce wrap (great for a low-carb option!).
  • For all my egg lovers, top a plate of this with a fried egg or poached egg.

How To Store Leftovers

What You’ll Need to make Grilled Kofta Kebabs

  • Ground beef: I use 85/15 ground beef. You don’t want to use super lean ground beef as you don’t want these koftas to come out dry.
  • White onion: feel free to use yellow or sweet onion too.
  • Italian parsley leaves: you need fresh parsley leaves for the best flavor!
  • Seasoning: I season my beef kofta with salt, pepper, and 7 spice.

How To Make the Beef Kofta

  • Mince the onion and parsley: In a food processor, add in the cubed onion. Pulse a couple of times until finely chopped but not pureed. Then add in the parsley leaves and pulse a couple more times to finely chop everything together.

  • Combine and shape: Combine the onion, parsley, and ground beef. Add the spices and salt into the bowl and mix everything together very well then shape into oblong shape meatball.

  • Skewer: Using a thick flat surfaced skewer, skew the meat onto the skewer, as shown in photos. If you don’t want to skew them, you can just form the same shape and grill them without a skewer.
  • Grill the kofta: Preheat the grill. Spray the grill’s surface with some oil spray and grill the kofta pieces for about 3-4 minutes on each side or until cooked to your desired level of doneness.

Tips and Notes to making the best Beef Kafta

  • Kofta need some fat to keep the kebabs moist. Always use no less than 15% of fat in your ground. I use 80/20 or 85/15 always.
  • You can use allspice if you cannot find 7 spice.
  • If using wooden skewers, soak skewers 30 minutes before grilling.
  • You can use grated or finely chop the onion and chopped parsley by hand if you prefer. 
  • Use other kinds of ground meat if you don’t like beef, you can substitute for ground chicken, or lamb.

Is curry keto?

Curry can be keto as long as you avoid the curry paste and curry sauce that has added sugars. Most traditional curries can easily be adapted to become a low-carb curry or a keto curry.

If you make your own homemade curry paste, your curry dinner will be healthier, cheaper and more flavoursome.

Most store-bought pre-made curry sauces have a high sugar content and are packed with wheat and other refined starches to thicken the sauce.

Many of my low carb curry recipes are chicken curry has all the traditional herbs and curry spices you would expect in a Malaysian curry recipe. You can enjoy it guilt-free!

It comes together in a very nice way as it is naturally thickened by the slow cooking process and the full-fat coconut cream in the homemade curry sauce. The gentle heat is mild enough for the entire family too.

What is beef rendang?

The authentic beef rendang curry is served across Indonesia and is often known as Malaysian beef curry in various parts of the world. It is generally a drier curry with much less sauce than you might be used to.

Many will argue as to which spices belong in a rendang curry. Others will also debate whether it should be a dry curry or a wet curry. In fact, they are both correct, there is dry rendang and a wet rendang recipe.

Many people will typically only picture chicken curry, but the beef makes for a flavourful dish—I highly recommend you try it!

There are also pork rendang, seafood, papaya, dried meat and even tripe rendang out there too. Once you get this delicious spice mix down, you can swap out proteins as you’d like.

How many carbs are there in a low carb beef curry?

When you make homemade authentic curry it has minimal carbs. This recipe has only 1.1g NET grams of carbs.

Be aware that the cauliflower rice and any leafy greens you decide to add are in addition to this.

And for anyone following a high protein diet, this Friday night curry has a whopping 30.4g protein per serving.

If you’re on the carnivore diet, ditch the cauliflower rice and have a double serving of the beef instead.

Coconut beef curry vs coconut chicken curry?

If you’re wondering which is best, both are delicious, it depends on which meat you prefer.

I love to make a creamy rich chicken coconut curry because it has a milder taste and is perfect for a mid-week family dinner. The combination of curry paste or curry powder with coconut cream, pumpkin and spinach, makes this a healthy balanced easy healthy dinner.

But if you want a more authentic taste, then beef keto curry is the winner. This quick recipe has an exotic flavour that you will fall in love with. It’s easy to throw together and has the classic taste of a spicy coconut sauce. So you can stop your fast food or takeout curry because this can be prepared in the morning and cook all day long in your slow cooker (or Instant Pot) and be ready for you when you come home.

What can I serve curry on instead of rice?

Once you discover how much white rice (or even brown rice) raises your blood sugars, you know rice is not suitable for anyone who has trouble with blood glucose control or for those who are on a low-carb diet or keto diet.

So if you are avoiding rice, fluffy coconut cauliflower rice or curried cauliflower rice is the best side dish to serve with a keto curry.

You can also make my keto tortilla recipe but add some turmeric or favoured spice, and make a quick and easy flatbread, naan bread, or chapati bread.

How to make cauliflower rice?

If you are going to make cauliflower rice there are two basic ways:

1: Sauteeing or frying the cauliflower rice in a big skillet over a medium temperature.

2: Cooking or steaming cauliflower rice in a saucepan for 5 to 7 minutes.

For both methods, you can use one or two tablespoons of your favourite cooking oil to prevent the cauliflower pearls from sticking to your pan. You might also like to use ghee (clarified butter) or some more coconut cream. Adding coconut cream and salt to your cauliflower rice really does make a huge difference to the end result and flavour.

Ingredients

With only a few simple ingredients, you can make your own Friday night takeout at home, for a fraction of the cost and without the carbs, sugars and starches. This 5 star recipe is loved by my entire family but also makes for a nice, elevated dish for date night too. It’s the perfect way to end the day!

  • Beef – You can use any casserole beef such as gravy beef, blade steak, chuck steak, rump steak for example.
  • Coconut cream – always buy the full fat coconut cream and not the coconut milk. The fat gives the curry sauce an amazing creamy texture and authentic coconut taste.
  • Spices – While many curries include garam masala, this recipe calls for an aromatic curry paste made from a blend of spices that’s similar, but slightly different. By mixing all the different dried spices together with the coconut cream, you get a variety and complexity of flavours. It may seem daunting to have all these in your spice drawer but once you have them, you can make curry paste for a fraction of the price of that from the grocery store.
  • Onion – if you want to make this keto curry even lower in carbs, or you cannot tolerate onions, you can omit the onion altogether. It really does taste beautiful with the sliced onion included in the curry recipe, but it will taste just fine if you choose to omit it.

Cooking casserole meat on low heat for hours renders the meat to be delicate, smooth and absolutely delicious. Buying cheap cuts of meat such as casserole steak is the easiest way to make healthy family dinners affordable and cheap.

I love using the slow cooker for keto recipes. Put it on in the morning, and it is ready for you when you get home. It is also a really great way to economise by buying the cheaper cuts of meat, making extra and saving the leftovers for lunch the next day or freezing for another night.

Instant Pot Instructions

Want to know my secret? I often forget to prepare my meals in the morning and turn the slow cooker on but I have no other way to cook casserole meat to be a soft and tender stew. So I have discovered I can quickly and easily prepare my low carb curry in the instant pot. Here’s how I do it.

  1. Turn the SAUTE function on you Instant Pot. Saute (fry) your onion with oil until no longer raw.
  2. Add all the spices and stir for 1 minute to enhance the aromatics from the curry mixture.
  3. Add the cubed beef and fry until each piece of beef is browned on all sides.
  4. Throw the coconut cream into the casserole dish.
  5. Cover with the pressure cooker lid and cook for 20 minutes.
  6. When the timer has finished, manually release the steam.

If you would like the spinach in your low carb curry, then stir it into the curry as soon as you lift the lid. The heat from the cooked meat and coconut sauce will wilt and cook the spinach.

How to cut the beef

Cut the raw beef with a sharp knife into cubes. You don’t want them to be too small otherwise they will fall apart and look like pulled pork. I would suggest cutting into 1 inch/2.5cm cubes, or even larger.

How to Use Coconut Cream or Coconut Milk in a Curry

By using coconut cream, makes this recipe dairy free, Paleo, and Whole 30 friendly too. But which type of coconut liquid should you use?

Coconut cream makes for a more creamy sauce and a thick curry paste. If you want to use coconut milk you just need to place your can of coconut milk in the fridge for 1 hour or freezer for 20 minutes. The high-fat coconut cream will rise to the top and you can scoop the creamed coconut off the top and use this.

If you use regular coconut milk (or reduced-fat coconut milk) your spicy curry sauce will be thin and runny.

Top tip: Always make sure you buy a sugar-free or keto-friendly coconut milk. So look at the nutrition labels and buy a can or box with more than 20% fat and less than 4% carbohydrates. Check the ingredients to check there are no added sugars or thickeners.

What’s the Difference Between Curry Paste and Curry Powder?

Curry powder is convenient because it has a long shelf life and doesn’t need to be refrigerated once open but many say it lacks the depth of flavour. Store-bought curry powder is usually yellow whereas curry paste can be yellow, red or green.

Curry paste is made with water or oil. Whist curry paste can be a complex array of flavours, it is often made with the types of unhealthy fats and oils that we would usually avoid in a whole food diet. Processed seed oils such as canola, sunflower and soy are easily oxidised and inflammatory.

It’s for this reason that I tend to make my own blend of herbs and spices then blend with coconut cream or ghee. Ghee is clarified butter and is traditionally used in Indian curry recipes.

Red Curry Paste vs Green Curry Paste

There are subtle but important differences between green curry paste and red curry paste. As a general rule, red curry paste is spicier because it is made from red chillies whereas green curry paste is milder because it’s made from green chillies.

Measure the coconut cream into the slow cooker.

Mix all the spices into a small mixing bowl or directly into the slow cooker dish.

Mix your curry paste ingredients together to make a paste.

Now add the cubed raw beef to the curry paste inside the slow cooker, add the onion that has been cut into quarters, and mix until all the beef cubes have been coated in the curry paste.

Place the lid on the slow cooker and cook on LOW HEAT or HIGH HEAT as per the recipe card below.

Just before it’s time to serve, stir through some leafy vegetables and cook for 1-2 minutes only.

Why this Recipe Works

This beef curry recipe is only 1.1G net carbs per serving, and when served on cauliflower rice, it makes for the perfect keto dinner, low-carb dinner, gluten-free dinner and family dinner.

It’s one of the most popular curry recipes because it doesn’t require any marinating time. You don’t need to stand over the oven stirring the beef on a medium heat and hoping it doesn’t boil dry.

How to Serve this Keto Coconut Curry

I serve the slow cooker coconut curry with cauliflower rice, often flavoured with coconut and spices. If you want to be super organised in the morning, shred/grate the cauliflower in the morning and leave it in the saucepan ready to go.

When you get home, pour some coconut cream into the cauliflower pan, and begin to cook on medium heat. Your vegetable rice will be ready in less than 10 minutes!

Just before serving your homemade curry, stir some of your favourite leafy greens such as chopped spinach, sliced silverbeet, Swiss chard or kale to add even more nutrition and colour. Add the greens 3-5 minutes before serving and cook for only 1-2 minutes. They will be wilted, but remain their vibrant green colour.

Sprinkle some desiccated coconut or a spoon of coconut cream to garnish individual serving dishes.

Instructions

  • Put the coconut cream and all the spices into the slow cooker. Mix to make your own delicious homemade curry paste.

  • Add the chopped onion and diced beef. Stir until all the meat has been coated in the curry paste.

  • Cook on LOW for 8 – 10 hours or HIGH for 4-6 hours, depending on your slow cooker settings and recommended times.

  • Add your choice of leafy greens to the slow cooker 5 minutes before serving. Fold them through gently.

  • Serve with fluffy cauliflower rice.

I recently shared my updated collection of 50 Amazing Zucchini Recipes on the Kalyn’s Kitchen Facebook Page, and from the response it was obvious that there are lots of people looking for zucchini recipes! Stuffed zucchini is a classic way to use those zucchinis that get a little too big, and my recipe for Meat, Tomato, and Mozzarella Stuffed Zucchini Cups is a hugely popular idea that shows how to hollow out giant zucchini and make cups to fill with a cheesy mixture of sausage and cheese. But if you have large-but-not-giant size zucchini, these Cheesy Salsa Beef Zucchini Boats are a delicious stuffed zucchini option with taco flavors.

This recipe makes a lot, but stuffed zucchini like this reheats well, and when you have a counter full of zucchini staring you in the face, you don’t want to cook something that only uses a little bit of zucchini. But if you don’t have lots of zucchini or don’t want to make so much, just cut the recipe in half!

What Low-Carb Salsa do I use?

I use Pace Picante Sauce (affiliate link) for this recipe. I love this brand, which doesn’t have added sugar and only has 16 carbs in a cup. I’ve used this salsa for years and  like it so much I have a collection of Low-Carb Recipes with Pace Picante Sauce, including some favorites like Instant Pot Salsa Pork Chops, Instant Pot (or Slow Cooker) Southwestern Beef Stew, Instant Pot Salsa Chicken, and Mahi Mahi with Mediterranean Salsa and Feta.

What are Zucchini Boats?

Zucchini Boats refers to largish zucchini that is cut in half lengthwise and hollowed out to make a “boat” and then stuffed with a tasty mixture.

How to Make Cheesy Salsa Beef Zucchini Boats:

  1. I used Pace Picante Sauce (affiliate link) for this recipe because it doesn’t have added sugar and I love this salsa. 
  2. We used zucchini that were about 10 inches long and cut them in half lengthwise and crosswise; then we hollowed out the inside with a melon baller (affiliate link)to make a boat; you can also use a sharp spoon.
  3. You can microwave them for a few minutes if you want the zucchini to be softer in the finished dish; we skipped that step.
  4. Brown the ground beef; then push it to the side and add the onion to cook it partly through.
  5. Then add Kalyn’s Taco Seasoning or your favorite taco seasoning, ground cumin (affiliate link), salt, pepper, and salsa and cook over low heat until most of the liquid has evaporated.
  6. While the meat simmers, slice olives and measure out the cheese. When the meat mixture is mostly dry, turn off heat and let it cool for a minute or two.
  7. Then stir the olives and most of the cheese into the meat.
  8. Lay zucchini boats out on a baking sheet that you’ve sprayed with nonstick spray and use a large spoon to fill them with the meat mixture, packing it in.
  9. Bake about 25 minutes; then sprinkle them with the remaining cheese and bake about 15 minutes more, or until the zucchini is cooked through.
  10. Serve hot, with some sour cream and salsa on the side to add at the table if desired.

Ingredients

  • 4 large zucchinis (see notes)
  • 2 lbs. ground beef
  • 2 tsp. olive oil
  • 1 onion, chopped small
  • 1 T Kalyn’s Taco Seasoning or any taco seasoning of your choice
  • 1 tsp. ground cumin
  • salt and fresh-ground black pepper to taste
  • 2 cups Pace Picante Sauce (see notes)
  • 2 1/2 cups grated Mexican Cheese Blend (divided)
  • one 6 oz. can black olives

Instructions

  1. Preheat oven to 375F/190C. Spray a baking dish with nonstick spray.
  2. Wash zucchini and cut off the stem and flower ends. Cut each zucchini in half lengthwise and then again in half crosswise to make 8 pieces. Use a melon baller (affiliate link) or sharp spoon to scrape out most of the fleshy inside part of the zucchini, creating a “boat” with about 1/2 inch of flesh attached to the zucchini skin.
  3. If you prefer your zucchini fairly well done, you can microwave the boats for a couple of minutes before you stuff them; if you do that blot dry with a paper towel before putting the stuffing in. (We didn’t microwave them and ours were just tender crisp when they were done.)
  4. Heat the oil in a large non-stick frying pan; add the ground beef and cook over medium-high heat until the beef is nicely browned, breaking the meat apart with the turner or a potato masher (affiliate link) as it cooks.
  5. When the beef is browned, push it to one side and add the chopped onion and cook for 3-4 minutes, until the onion is starting to soften.
  6. Stir the onion and beef together and add the taco seasoning, cumin, salt, pepper, and Pace Picante Sauce (affiliate link) or salsa of your choice.
  7. Stir together, then reduce heat to low and simmer until most of the liquid has evaporated.
  8. While the mixture simmers, drain the olives and slice and measure out the cheese.
  9. Put the zucchini boats on a large baking sheet that you’ve sprayed with nonstick spray.
  10. When the meat mixture looks dry if you draw a spoon across the bottom of the pan, turn off the heat and let it cool for 2-3 minutes. Then stir in the olives and 1 1/2 cups cheese.
  11. Use a large spoon to stuff the mixture into the zucchini boats, packing it tightly so you use it all.
  12. Bake the stuffed zucchini 25 minutes, or until the zucchini is starting to feel soft when you stick a fork into it.
  13. Remove the baking sheet from the oven and sprinkle the top of each stuffed zucchini with additional cheese. Bake about 15 minutes more, or until the cheese is melted and zucchini is done to your liking.
  14. Serve hot, with sour cream and additional salsa to add at the table if desired.

Notes

To make the full recipe you need zucchini that are each about 10-12 inches long. If you don’t have Pace Picante Sauce (affiliate link) choose a salsa with the lowest amount of sugar you can find.
